Come and learn in our Karibunis restaurant, described on tripadvisor as 'the best kept secret in Birmingham'.

This qualification is the latest and most up-to-date qualification which replaces older NVQ’s. It has been developed with employers in the catering industry and it is suitable for school leavers and adults alike. You can study this course over 1 or 2 years, depending on your ability.

When you complete the qualification you will be ready to work as commis chef in a professional kitchen, so you can apply for jobs as soon as you qualify. You will have the employability skills to work in a range of kitchens across the industry. Our previous students have gained employment in Michelin star restaurants, cruise ships and high street brands.

Course description

Our kitchens are modern and purpose built and in line with industry standards which will enable you to learn how a professional kitchen runs. We have specialised equipment so we can teach you authentic cooking techniques needed for a culinary career that could take you across the world, such as wok stations and tandoor ovens.

We aim to give you the cooking skills to be able to gain employment with Michelin star restaurants along with hotels and high street brands. We also have a lot of links with employers across Birmingham to give you real work experience in a range of restaurants and food facilities.

The course will cover:

  • The structure of professional kitchens and the principles of working as a professional chef to include both cooking and preparation methods.
  • How knives, tools and equipment are used in professional kitchens
  • How to work safely and hygienically

You will also learn how the kitchen links with the front of house, gaining valuable, practical experience in our professional restaurant Karibunis, offering themed evenings to customers on Thursdays. All dates will be given to you at the start of your course.

What areas will I study?

You will cover many cooking techniques, including:

  • Boiling, poaching and steaming
  • Stewing and braising
  • Baking, roasting and grilling
  • Deep frying and shallow frying
  • Cold food preparation
  • Working in a professional restaurant
